Delicious Vegan Gluten Free Bread!
- 1/2 cup of warm water
- 4 1/2 tsp of yeast
- 1 tsp honey
- COMBINE above and set. Aside –
- 1 tbsp of chia seed
- 1/2 cup warm “milk” of choice 1/2 cup warm water
- 1 tbsp vinegar
- COMBINE above and set aside –
- 1/3 cup brown rice flour
- 1 1/2 cup white rice flour
- 1 1/2 cup Oat flour
- 1 tbsp baking powder
- 1 1/2 tsp of salt
- 2 tbsp Olive Oil
- All ingredients should be room temp and liquid should be warm to touch but not too hot to touch to assist the yeast in proofing. I make my flours by using whole items and milling them in a coffee grinder. This dough will be wet, it may resemble a pizza dough ball but a bit wetter…. Its ok!! Oil your baking dish of choice and place dough into dish and cover to let rise in a warm spot at least 90 minutes. It will rise a bit, maybe an inch or more but not do the typical double in size thing! Bake in 350 degree oven for approximately 40 mins, edges should be just pulling away from the edge of the dish and it should hollow if you “knock” on the loaf! It may drop in the oven vs rise a bit more but that is OK as well, it will come out and slice about 2-2.5 inches tall. Ok here is the hard part…. Let it sit for at least 30 minutes but an hour is better! If you have to leave the house to accomplish this DO it!! It will smell delicious and tempt you!! But I promise the wait is very worthwhile!! The next day it is even better but I just haven’t been able to wait and give up warm bread!
